You won't get the same profits from staking 0.001 coins as you will from 5,000 as the more coins you have the more chances you have of earning stake rewards. The more coins you stake the bigger your staking weight will be which makes it easier to hit blocks.

Staking is embeded within POS systems because they use different thing from mining. As it goes for profit what to stake you will have to do your own reasearch what is best for you and better if you believe price of particular coin could go up and thus you generate passive income from simply holding your wallet open.

As it goes for VPS you don't have to buy any hosting, yes this is dangereus to let your wallet open on 3rd party server. What you can do tho is buy something like raspberry pi, they are cheap piece of hardware that don't cost much to run. You can find many guides on how to install OS - linux on it, if you are not tech savy. Install wallet later on and stake your coins at home. Fairly cheap if you have 24/7 access to the internet and electricity.
