Warning:
Ignore any pop-up message asking you to update electrum.
Old versions of electrum are vulnerable to a phishing attack asking you to download a malware instead of the real version of electrum.
Download electrum only from its official website and verify the signature (Use DireWolf's guide as suggested by HCP)

After you installed the new version, you can access your wallet using your seed phrase or wallet file + your password.
For sending bitcoin, you can simply go to send tab, enter the amount and the receiving address and click on "Pay".

I deposited BTC in to my wallet in Dec 2017 and haven't touched it since. I'd like to move it to another platform and a little confused as to what to do.

If anyone can please assist, it would be greatly appreciated.

I suggest you back up your wallet files before upgrading.  The wallet files will be located in the following directories:

Windows: C:\Users\\AppData\Roaming\Electrum\wallets
Ubuntu: ~/.electrum/wallets/

You will also be able to restore your wallet with the seed phrase that was created by Electrum when you first set up your wallet.  The best practice is to uninstall the old version and then install the new.  As HCP (kindly) suggested, make sure to verify the download before installing it.

You'll need to update to the latest version of Electrum... 3.0.2 will not be able to connect and sync to the servers properly.
