I highly recommend to  use escrow, it will not helps again pp chargeback , but at least in first  phase of deal you will not be scammed.

1% fee is actually relatively low, if you think about it. Exchanges give a 0.1-0.2% fee on their trades, yes, but that's not for bitcoin/paypal or bitcoin/cash, is it?

On localbitcoins here in Australia, prices are as high as 15% above or below market price. The problem here is your trust, of which you have none. You might want to spend that 1% you take on escrow, maybe that'll help.

Or what you could do is sell on localbitcoins (Does it work in France?)

1% fee is too low to believe. I have paid 5% to one guy for the same kind of services at the time when I just joined.
I pay 1,6% feed for my withdrawing on YoBit now and I'm totally satisfied with this number, I feel safe and don't want to change a thing about that.

Is there an escrow involved or do you want the buyer to paypall you money first?
Yes no escrow, but if you want an escrow you pay the charges to the escrow.

Why should anyone pay you a fee?  You aren't actually doing a service, you are just trading BTC for fiat, something you want to do anyways.  I don't see anyone taking you up on this either because you are a newbie.  You have to build up trust for these things.
I know but if i want to get trust, i have to sell x)

Yes no escrow, but if you want an escrow you pay the charges to the escrow.
