If you begin by setting up a Stellar node, a "federation" even maybe, I think you will be off to a good start, and it will save you a lot of coding.

Some of the key parts of their released free open source code though still last time I looked at them (a few years ago at least by now) said they were not ready for production use, so making them ready for such use and releasing the ready code would be a very useful side-effect of your interest in the DEX-development field.

It also gives us a baseline for a desired-features question such as yours, in that we can right off the bat narrow the query to something like:

"What features does Stellar not yet already have that you would like to see added?"
