I'm not going to use his services, but I'm wondering how would I go about copyrighting my content (so they cannot edit it)?

I am unsure as to how you copyright things mainly (I could probably do it but don't want to give a false impression).
As I understand it, anything you create is your intellectual property. This means that you technically own the rights to what you create and can do what you wish with it. This is then licensed specifically by the person (such as, if you were making software and wanted it to be Open Source (copyright free) it would be released under a General Public Use license that means that anyone can modify or edit it.
You'd have to speak to a lawyer or solicitor on how you can copyright content as it usually has to be accepted that it is your (and only your) intellectual property and is not in itself breaking copyright law.
