Well if you think about it, given that dice sites make money statistically from the house edge, it makes more sense for me to operate the site properly for the long run. Plus, the pseudo-anonymity of bitcoin makes stolen bitcoins really hard to use because you can track it forever, and spending them will likely result in being caught, so it would be really stupid for me to steal your bitcoins.

A newcomer to the community can deposit BTC with a trusted person/group of people as collateral in case they run off with everyones' coins .  Now that I think of it, this scheme doesn't make as much sense for a dice site because if the operators had more coin than the entire invest pool to set aside, then they might not need investors in the first place.
