You are playing against, other players, so the house has no reason to rig you.
How can you assure yourself that you are playing against real other players? Do you forget that there is also a possibility where the house may act to be player to play against you and if they can control the outcome then you will be busted easily? If it is being done in land-based casino, maybe the chance of cheating is smaller  because you watch it live but when you are playing on online casino, what you see is the outcome only as you do not see the process. The idea to have provably fair system in pvp game is to guarantee the fairness between players, without provably fair system it will bring big doubt.
They can do that but I think does not really matter as long as the system is fair and we can verify it. The game will still depend on our skills and maybe some luck, since this was PVP. I think some PVP are somewhat similar to live games. I like this better. Not only that it's more exciting but we can also see if there is something shady happening in the background or on our opponent's side.

Provably fair system has always been a part of crypto and in fairness, it makes the game more fair. However, even though a casino has it, it is still not guarantee that gamblers will now trust them because there are still other things that can affect their trust. I agree, PVP casino games are better than playing slot games because if you are playing with an opponent and you have a chance of winning if you are good enough and wise enough, in PVP casino games you will not regret your losses because you give your all in order to win, unless you are a hard-core gamer or gambler, so its up to you.

About the concept of if we are sure that our opponent is a real human or person, I think it is, but it can't be helped that some casino platforms will plant or place AI because it's part of the system, but no casino platform will admit to it; we are the ones that will notice it, and if you are unlucky and face an AI opponent, then I guess it's your loss. But I think it's better to play with an opponent than gamble using slot games, random casino games, or luck-based casino, because losing to those is kind of regretful, and you will be frustrated if you lose.

But nowadays methodical pvp games, consists of you creating a game, and waiting for players to join.

You are not immediately put into a match, seemingly revealing there are not bots already programmed to beat you.

The best of the best pvp platforms, have much more transparent systems, so you can see everything going on in the backend.

If it is a pvp game, it would be easy to detect if there were bots. I.e, there is no one chatting in the chatroom or, the username is obviously generated with random characters.

It is up to these pvp platforms, to provide you all payout data, so you can cross reference it and do your due diligence. Such as taking a look at all the winners, names to see are they bot-like, or user like. And are they reoccurring. Likewise, can you talk to these users?

I do not think there is any scope to be scammed by a platform like Bitwinup. Everything is done on chain. Besides the team is earning from the fees of the pool for every trade. They are not holding any coin for you. So platform like this a scam protected :-D
