If I broadcast my transaction now, more than a week after the BitPay invoice expired, what will happen?  

Will my btc go into limbo and then be returned or Huh
Their address will receive it but you will not get credited from it.

If you didn't already broadcasted the signed transaction, you can Select the Saved Transaction
from History->Right Click->Remove to delete it.

It will remove the "displayed" deducted balance from your address and return to its actual value.

I took a screenshot of both my wallet and the tx but do not know how to upload it here.
Also... for posting screenshots, you need to be a junior member. As a newbie the only thing you can do is post the URL links.

I'd suggest uploading the pics to whatever image hosting provider you like (imgur.com etc) and then get the "share links" and copy/paste them here.

From Electrum's Release Note page:

Local transactions: Transactions can be saved in the wallet without
   being broadcast. The inputs of local transactions are considered as
   spent, and their change outputs can be re-used in subsequent
   transactions. This can be combined with cold storage, in order to
   create several transactions before broadcasting them. Outgoing
   transactions that have been removed from the memory pool are also
   saved in the wallet, and can be broadcast again.

That's probably what you got. Try to: Right click the transaction -> Details -> Broadcast.

I am completely new to Electrum but did successfully pay a Bitpay invoice earlier this month. 

Over a week ago I tried to pay another but did something wrong and it did not complete.  The btc amt is deducted from my wallet but the tx is not dated and instead shows 'Local [rbf,3.0sat/b]' and the  description is completely blank.  The tx is unknown on the blockchain.

How can this get fixed?  I took a screenshot of both my wallet and the tx but do not know how to upload it here.

Thanks for all suggestions!
