As it is now, all coins that are on the exchange are traded like a stock.  At the last know price like bitcoin.

But, could a coin be treated like a mutual fund? where the trades that happen through the day are based off of the last price the day before so no matter how it changes through out the day, the price stays the same and updates at midnight each day?
You probably meant the ETF. But in crypto market, the trading activities are happening in 7/24 non stopping way. So the price is continuously upgraded on the order book between the buyers and sellers.
