I think also Pokerstars has no problem with changing. Thy set a transfer limit so you are not able to change too much they could get problems with the law.

As you deposited fiat to PS, you must withdraw winning back to the same mean of the deposit.
Thus, you can do anything you want with it.

Exchanging currencies is always legal. Problem is coming when you want to change winnings or other currency to your private bank account. Not all banks like when you trade cryptocurrencies.

I think it is way better for you to read their terms an conditions, but I remember seeing in the forum people selling poker stars for bitcoin maybe you can find one of those threads to the op and send them PM.

There is nothing legal or illegal while exchanging your winnings into bitcoin or into fiat. Just go through the terms and conditions mentioned with the pokerstar if there is no complications just withdraw in terms of bitcoin to the address where you need it to be saved. Certain sites have limitations in withdrawal which is one that need to be concerned.
