It is very simple if you disable using password to login into the vps, and use ssh key instead. However why not just store the coins on a seperate device instead of VPS? VPS are usually safe as long as you trust the provider, and you are using an SSH key for authentication and only allowing logins from few IP's.

I would like to host an altcoin node but an unable to do so, so I’m considering purchasing a VPS. Is it possible to host the node without giving anybody who has access to the server itself access to the coins?

Your best option will be to store the coins on a separate device or find a different wallet to store it on.
You can host a node easily on a VPS I think. And the security of it is dependent on the operating system and the trustworthiness of the company you use (read the reviews beforehand). Also ensure you use strong passwords and strong encryption. And if you can, take out the private keys from the node until you actually need them (you can instead follow what's happening to your addresses on block explorers until you're ready to move the coins)
