You might be able to find reddit threads which would show what addresses these exchanges have used in the past.
They also probably keep changing their addresses.

If its a cold storage then its safe(However recently there was an article about hacking attempts on cold storages).
Also, I don't think being able to see the value poses any risk as there is a rich list of bitcoins, and thats what the blockchain is for.

Do you mean an exchange like BitStamp, or you mean a person?
