Personally I would just use that cash to buy coins, I mine at the moment, its OK but I Don't think I would start again with current difficulty levels.

$300 is not bad at the moment. Don't expect to become rich fast, but I would suggest you to make the rig. You are gonna learn a lot while building it and you can later use your mined coins for trading and investing.

At current prices, you would make about $6-12 a day in profit running 24 hours a day. If you mine specific alt coins to hold on to instead of trading into btc that profit MIGHT turn into a lot more in the future (it might also end up being less).

You won't make quick money in either case.

I have the same setup -- only I have 2x 1070s and 4x 1060s.

So I am thinking about building my own rig, What would i expect the return to be if I used overclocked GTX 1060 with 6gb ; if I could get 6 of them at $300 a piece?
Will they work for a while or are they already too out of date to generate enough money to be of interest?
