Just to make sure you understand.  When you go to your online computer running Electrum and want to use "watching only" its really simple.  Ranochigo gave you some good points above.  You don't need tons of stuff on the USB you mentioned.  Just insert the USB in your offline computer and copy the master public keys to the usb (can be a text file).  Go to your online computer and create a new wallet using Electrum.  When it asks, paste the mpk (master public key) into the box and Electrum will know its a watching only wallet since there are NO private keys.  ALL the addresses you show on your offline wallet will automatically be generated by Electrum on the watching only wallet.  To help you visualize - those MPKs can be taken to any computer running Electrum and it will generate the exact same addresses every single time.  Don't lose the SEED (or private keys) on the offline wallet or any coins are gone for good.  Unless you have a specific reason to watch ONE exact address this is a much easier way to accomplish what I think you want to do.  If I am wrong, sorry, I try to make it easy as can be.

import a watch-only Bitcoin address.  I'm a newb and probably missing something simple...
Using the Watch Bitcoin address option imports only Bitcoin address, eg those starting with 3 or 1.

If you want to import the master public key, aka. xpub, go to Standard wallet and then use public or private key and you should be able to import it there.

Are you trying to import xpub? There are two options in Electrum start screen, one is to import the xpub and one is to import a watch-only Bitcoin address. To import the xpub, go to Standard Wallet> Use public/private keys.

Setup question w Electrum Watching Only running Windows 10 - Electrum v 2.7.12....
1. Created new wallet on offline machine
2. Generated Master Public key and copied to text file, then USB
3. Inserted USB into Online computer running same version of Electrum
4. Setup new wallet as Watching Only
5. Addresses then pasted from the USB into the designated import area
6. ISSUE...try to select the "NEXT" button to go to next step and button is greyed out and not selectable?

Any ideas?
