So I started with coinbase so I could get my foot in the door.

BUT in the past 2 weeks, I have seen them go down twice in the midst of the time where folks would like to be moving funds around.

SO  with that, I see coinbase as nothing more than the springboard to a newer exchange. Buy using the instant purchase and immediately transfer them into the exchange of your choice.

Am I thinking this correctly? Is this what most folks do?

I haven't understood you well, but will try to explain from what I concluded you are looking for.

They might go down due to overloaded traffic or because of some lack in their system. However they are good and reputable exchange, they have an exchange with buy and sell offers if you are that kind of person this is their exchange : https://www.gdax.com/

Yes you could buy instant and transfer your funds to another exchange  if you are looking to trade between crypto currencies as they don't support to many of them.
