Reading from other posts I have seen that KYC is needed when you request a withdrawal for even btc to another btc wallet for Poloniex. So no. I prefer not togo thru that just to be able to get my own btc off their site even if I wanted to. That is not freedom to me but being locked in like a contract.
I don't think poloniex will ask verification if you are just withdrawing+deposit bitcoin or alt not excedding daily limit of $2000. I have account there which is not verified but i am trading there without any problem and also depositing/withdrawing within daily limit.

It more so because of what coinbase is doing with their customer's information that is more than concerning me:

Well then if that is true then i will give them a try,
but there was some thing with the site that did not rub me the right way causing me to keep looking further for one that did not request any i.d in order to start trading there.

I went to Kraken after searching around for an exchange that I can buy bitcoin with.
So is I.D or documents need to buy bitcoin on their exchange?

All the ones that I have visited including Poloniex asked for Identity Verification Process (KYC) in order to even use their site.

Where you heard that Poloniex need KYC verification in order to use their services ? I use them and I never verified anything , a verification is only necessary when you want to raise limits . Same thing should apply on Kraken If you are trading using crypto currencies only but you have to provide at least your phone number in order to start trading , If yo see Pre-Verified in your status then It means that your country is not supported.

Be sure to not use pseudonym but a real name (they "verify" if the name is real or not), since they are "forced" they may ask you for ID if they think that your name is not real, even though if you verify your account through phone verification.

Even though there is a large trade volume, don't know I don't prefer to trade there, I prefer more poloniex and yobit.

This is what you are looking for - it is a list of Kraken's Verification Tiers. https://support.kraken.com/hc/en-us/articles/201352206-What-are-the-Verification-Tiers-

Basically you can't do anything on Kraken if you won't give them your personal info. Trading is disabled for people who are anonymous.
