I found a service that at least offers to import balances from many exchanges: https://coinbalance.org/
It's just a fraction of the functionality I was looking for, but it's better than nothing and it does it's job quite well.

Here are the things that I expect from such a service:
- API connection to all major exchanges (I don't want to add everything by hand)
- tracking of all transaction types that are offered by the exchange (deposits/withdrawals, trading, funding, ...)
- no mobile only application (if it has a mobile app thats fine, but I want to use it at a computer primarily)
- BIG PLUS: self hosted or desktop application
