Ubuntu was the main distro I tried before switching to Mac. Unless you like hate using GUI most of the time, stay with OSX 10.6.

I am considering switching from mac to ubuntu any help/advice on this matter would be greatly appreciated!
Can anyone tell me if i will still be able to run these programs on ubuntu (tor, bitcoin and utorrent)
Yes, yes, no, but there are dozens of replacement options.

What program would I use as a replacement for word (will people I send this to be able to read the file type?)
Open/Libre Office (essentially the same program, split a while back) They can both save in all kinds of formats, including PDF and Word .doc.

What would I use to run avi files?
Built-in Movie player, or VLC (easy to install)

Will I be able to find versions of these Games (minecraft, modern combat, and gba/snes emulators).
Yes, Maybe, Yes (oh good god yes).

Does WINE work and is there any options to run mac programs?
WINE works for most things, for running Mac stuff, you may need to use VMWare/VitrualBox. A lot of Mac software (well, the cheap/free stuff) is ported to linux, though, because they're based on similar architecture, and it's relatively easy.

Why switch when you can dual boot or run it inside a VM?
 best of both worlds

and you can use openoffice I think they can export to word compatible file formats
Tor works, utorrent works, but I would recommend rutorrent it is better on linux
VLC runs on linux and can play avi files
minecraft is java so yes
no wine type program to run mac programs

Try first installing Ubuntu in Virtualbox on your Mac, and see how you like it.

If you don't know the answers to these questions, you probably shouldn't switch to ubuntu.

But, almost all yes, except:

I am not aware of OSX emulator for Ubuntu
Don't know about the games, but wine plays a lot of them
