I'm looking to setup a cold storage computer running Armory in offline mode.

I'm looking to run on Ubuntu.

What's the minimum in terms of RAM and hard drive required for reasonable performance? 

There is an offline bundle for the RaspberryPi, but I don't know if I would call it's performance "reasonable".

I use it.  Its performance is "reasonable" but not good.  It takes up to half a minute to sign a transaction.  But considering the time to move the transaction over USB to and from the RPi, not to speak of taking it out of the box and hooking it up to a screen, the computational time is not an issue.

The hard drive doesn't have to hold the full blockchain in offline mode right?

Correct, the offline computer will only sign the transactions, nothing more. For that, storing the private keys is enough.

I think 512mb RAM and a hard drive that can at least hold the OS and Armory + dependencies is enough Cheesy
