I recommend get a celeron and save for more GPUs.
To mine with Ryzen, you should consider additional expenditure for motherboard and  PSU.
It is not profitable enough compared to having additional GPU.
Also for home server, CPU resource will be consumed by both mining and server,
it may cause some unstability to your whole system.

I'm building my 1st 6 GPU mining rig and I'm wondering if I should invest in a AMD Ryzen 1700x CPU or get a Intel Celeron + save money for more GPU?

I'm limited in circuits and space.
AMD Ryzen 1700x CPU generates decent money and ROI is about 1 year.
I'm getting GTX 1070s. I may add variety if I can find other GPU for cheap but GTX 1070s are more available and good at doing a variety of hashes.

The way I see it is since I can probably only use 1 rig per circuit, I might as well try to use it to the fullest with mining with the CPU too.

Or would it be better to just go cheap with CPU and have more money saved for additional rigs/GPU?

I might also use it as a home server of some sort. Like web server or something.
