As mentioned above, accepting PayPal is not a good idea.

I also will doubt that any reputable escrow will be willing to hold onto any PayPal funds because they would be taking the counterparty risk from the person sending the PayPal. If the person sending the PayPal funds were to attempt to chargeback the PayPal funds then the escrow would be the person who PayPal would go after.

To be on the safe side escrow should hold the funds for at least 180 days due to PayPal's ToS.
I think that won't be feasible for the seller.

OP, since you want to buy a gift card, you can at first head on to LocalBitcoins and find local bitcoin exchangers in your country for buying the appropriate amount of BTC. After that you can contact any of the escrow providers from here and complete the deal.

Also be sure to go through iTunes' ToS to be on the safer side.

The problem with PayPal is that they can suck the money back out of the recipient's account many months later, for credit card chargebacks, fraud, stolen accounts, etc. Unless you want an Escrow agent that hangs on to your payment for the year it takes to really be "clear" of these risks, it is not practical.

I think a trader can help you.. he'll  take your Paypal and send bitcoins to the escrow service.. this is the best method to complete your deal. just contact with Shorena. https://bitcointalksearch.org/user/shorena-181801
