Solo/Pool mining is affected by the difficulty change and luck.
Nicehash mining is not affected by them because you are getting paid by shares, it is only affected by the orders submitted by hashpower buyers.

So say in 24 hours, the first 6 hours you get 1000coins, the next 6 hours you get 500coins because difficulty doubled, then the next 12 hrs you get 800coins, so in a day, the total is 2300coins.
As the difficulty changes, you get paid in different rate with the shares you submitted.
On the other hand, each share is paid at the rate nicehash gives you at the time you submit it, and it's paid in btc so it doesn't get affected by the coin value.

If you look closer, you should see that the rate on nicehash is usually lower than you calculate it with a profit calc because people simply don't buy hashpower where they can get no profit.
The reason you get $8 on nicehash but $6 on a normal pool probably because the coin value has dropped as the calc isn't updated in real-time.
So maybe in the time frame you mine good amount of btc on nicehash, but when you mine on the pool, even if you get a lot of coin, they worth $6 instead of $8.

I have one rig right now that has 1 - EVGA 1080, 2 - EVGA 1060s and 1 - Zotac 1070.  At this moment when I enter my hash rates into whattomine.com, it says Signatum is my best bet with a profitability of $8.58 a day.  second is Zcash at $8.07 a day.  If I mine SIGT for a day and and then move it over to Cryptopia to exchange for BTC, I get about $6.20 or so total, are the fees really adding up to that much?  I double-checked the exchange rate on Cryptopia and it is still around $8.50 mark when I exchange it to BTC.  I've tried algorithm switching software and still end up with the same avg a day of around $6.10 or so.  If I use NiceHash though I get almost $8.00 a day.  I was under the impression that if I mined SIGT directly from Suprnova.cc and exchanged myself I should see more profit.

Help please.

Besides some pools are known to cut more fees from withdrawals/earnings. Ensure that you are using a trusted resource for mining pools.

They don't and can't take in to account other variables like price fluctuations, difficulty fluctuations, pool round variance and different pool/exchange fees. Unless you have a farm where you can mine enough coins to cash out in time to exchange them for the coin you want quickly, the profitability you see will not be accurate.

So, i thought about this and I did a test.  I mined SIGT on zpool.ca for a few days.  I checked SIGT pricing and it never dipped below about $8.00 a day on whattomine.com.  Each day I checked my balance and I got about $6.20 each day after exchange.  I did this experiment on NiceHash and I averaged about $8.00 day, what I was expecting.   Does this make sense?

Again, whattomine doesn't take in to account other variables that can and do affect your profitability. Pool round variance, rejected shares, pool/exchange fees, Tx fees, etc. all affect your bottom line by as much as 20-30%. By default whattomine also uses average 24H difficulty and profitability in it's calculations instead of real time. The best way to figure out what your best profitability for your rig is, is to try different pools if one isn't working for you.
