I want to create a crypto that work outside exchanges, so it's price is completly decided by the market, not an entity.

It is possible to create a cryptocurrency that operates outside of exchanges and whose price is determined solely by market demand. However, it is important to note that the value of any cryptocurrency is ultimately determined by the collective actions of users and the wider market, regardless of whether or not it is traded on an exchange.

so it's more secure.

What makes it more secure?

you can't exchange it directly for money.
You just made more investors hate the project. If it cannot be exchanged directly for money then, what does it do? I doubt this will work out. Everything is about the exchange rate today. You cannot tell investors that your currency is not up to exchanging and it won't be listed in an exchange, it almost sound like a scam.
There must be a basis on how the value will be proven by the market and that means being listed to one of the reputable exchange.
What you should be working out is to find a fix to that kind of hole and not take advantage of it.

Ask yourself if your proposal is unique, original, useful and do your research in order to spot if any existing cryptocurrencies already fulfill the goal you have in mind, so it won't make much sense to launch a crypto that offers a concept that is already present on the market, especially if the features offered aren't received by crypto adopters with great enthusiasm.

the propouse is to make a coin negociable, minable and the only way to trade it for money is exchange it with another stablecoin that work inside an exchange. you can't exchange it directly for money.

crypto > stablecoin > $
$ > stablecoin > crypto

so it's more secure.

the vallue is determinated by negotiation:


1Cr>1$  1Cr>5$  1Cr>3$

so: (1+5+3)/3=3  --->  1Cr=3$
