Don't use iTunes or iPhones. iTunes has always been ridiculously slow whenever I've used it. When my battered iPhone 3 breaks I won't be going back.

Are you using a HDD? Because then you might want to defrag it. It could make a big difference. 
i try not to update all the time, since most are add ons.

Uninstall, defragment, re-install.
Seriously, iTunes is a cow and needs a rework badly.

I connect my iphone to my computer and it takes the best of 10 minutes to respond...its ridiculous my computer is what I use for gaming and its certainly powerful enough. I've done some searches and this is a massive problem found my many.
