There is a very short video that shows a few functionalities of Jade and Sparrow here.
I recommend you watch a video by BTC Sessions that shows Jade's airgapped capabilities in combination with Nunchuk wallet. It's this one. Apply the same logic to Sparrow and read Jade's and Sparrow's support documents to get the hang of it.

You don't need Sparrow to be air-gaped  when working with Jade. Airgaped means to be installed on machine which was never Internet connected and will be never connected. Such setup is commonly used when airgaped Sparrow is destine to sign transactions. But in your case Jade will be  the (airgaped) signer  while Sparrow will play the role of the hot-watcher and broadcaster.  So if you set Sparrow on airgaped machine it would not be capable neither to sign nor to watch. Read instruction on  the official Bloackstream  site which may help you with setup. (To set up the watch-only wallet just pair your Jade to Sparrow client, nothing else is needed.)

I have both wallets  installed but  use more than often  Sparrow as (in my view) it is more functional and has the robust GUI when comparing with Nunchuk. Regarding the security,  both are safe if they are used in the watch-only mode, i.e paired with hardware wallets  which sign for them the  to-be-broadcast transactions.   BTW, Sparrow may opt you the fake-conjoin mode, which is capable to  elevate your privacy to some extend

Both of them are non custodial, open source and use BIP39, there's no need to compare either of them if you're looking with the security since they're the same.

It's just Nunchunk has a feature to backup your passphrase on cloud, this is not safe, but you have a choice to not use this feature.

Sparrow is more known about it's privacy, they've disabled their Coinjoin, but even if they ended up like Samourai wallet, you can always access your wallet using other sites.

Both are software wallet, but both offers cold storage if I'm not mistaken.

As multiple users have mentioned in your previous post, if you want to keep things as simple and as secure as possible, then going with a singlesig hardware wallet is the way to go here.

And if you have different questions about different wallets, it's probably best to keep one topic and ask everything, instead of opening multiple ones.
