bezzz, the exchanges are chosen based on their reputation and security. We intend to add more exchanges in future and also enable direct fiat withdrawal using the exchanges. Currently, you dont need to make an account with the exchange if you want to freeze the value of bitcoin against fiat. Also, the conversion/freeze will happen instantly to provide the best rates and zero volatility.

InstaConvert allows cardholders to pay in altcoins to a merchant who only accepts Bitcoins by converting their Altcoins into Bitcoins instantly. Thus, the altcoin users can convert as per their demand and removes the hassle of using an exchange. Moreover they will get to use their Altcoins at all Nuovocard Merchants.
