1070 6GB is giving around 27MH/S and it consumes less power than AMD 580 8GB(30MH/S)
You should give a try to EthOS. It works seamlessly but you need to. reconfigure gps upon power failure.

The RX 570 8GB and GTX 1070 8GB are the two kings for mining ETH. But it depends on what price you get them.
If both prices are similar, I personally would prefer 1070 because they consume less power than 580 and are easy to tune.
As far as the software requirement you mentioned, yes that is possible. You need to find a miner that will miner ETH with selected GPUs. Similarly that goes for Zcash miner.
