I use server psu with breakout board, and option A for my RX570/RX470. basically riser consumes zero watts if card requires additional power. in this case you can power all risers using one sata cable and stock 6pin to sata connector.

If I right, those PSU (EVGA SuperNOVA 1200) have 6x 8pin (6+2), 2x 6pin. PCIe cable will more worth if you are using it for GPU powering. That PSU is fully modular, so you can be powered your riser using Sata with separate rail with safer.

Wondering what your thoughts are on these two setups... Is it safe?

A) Powering the GPU+Riser with a single VGA PCIE 8PIN(GPU)+6PIN(Riser) - https://imgur.com/a/fuoIp

OR

B) Powering 2x GPU's with a single VGA PCIE 8PIN(2x 6+2PIN) cable whilst powering the risers with a VGA PCIE 8PIN to a splitter (2x 6PIN) which then leads to 2x 6PIN connectors on the riser boards - https://imgur.com/a/dHPPv

My head is confused with a lot of mixed information online regarding using/not using SATA cables and would like to minimize the risk.

The rig I plan on building is a 6x Zotec 1070 ti mini powered with a single EVGA Supernova 1200w PSU.

Any help is appreciated.
