unfortunately mac will not be available at launch, only linux and windows. you can either run a virtual machine on mac or wait after launch. my apology

any dev who is telling you his proof-of-work coin has instant transaction with zero miner initially is an outright liar or does not know what he is talking about.

Please test windows wallet for errors before launch. Some coins failed by dlls errors, etc.
promise there will be no missing dll and fully functional windows wallet.

our devs are qualified. working with foreign, not nsa. it's open-source code, feel free to check.
also, your second point, there is no short-term solution, but at least block re-targeting will help for Kibble in long-term support. Once a block is found, the diff will drop for less miners
