If I enter the mode only to consult the wallet, the access works, but there it also does not open the option to insert the seed
This makes no sense. Can you try to explain it properly please?

Let's start from the beginning.
How many words does your seed have?
What wallet did you use when you generated the seed? Electrum or a different type of wallet?
Are you 100% sure you have written down the words properly? Could their be typos due to bad handwriting?

In what format are the words written down? Have you clearly market them as word1, 2, 3, 4, etc., or is it just a list of words in different rows/columns?

as I had the address saved and the seed too, I thought it would be easy to recover it, but whenever I try to insert the seed to recover the wallet, the next button doesn't work, both in the mobile and windows app.
My guess is you're selecting the wrong option when restoring the seed phrase. Should be in "Standard wallet->I already have a seed" and not in "Import bitcoin addresses or private keys".
If not and you're using the correct restore menu, there's something wrong with your seed phrase.

When typing the words, try to let Electrum finish each word by selecting the correct word that will show while you're typing.
If the word isn't being displayed while you're typing a few characters, chances that it's incorrect is high.
Alternatively, see if your seed's words belong to this list: https://github.com/spesmilo/electrum/blob/master/electrum/wordlist/english.txt (use "search")

If you check the BIP39 and the 'next' still grey out after entering your seed phrase, then that seed phrase is not correct.
If you check "BIP39" in the desktop version of electrum, it's impossible that the "Next" button is grayed out.

If you enter a valid BIP39 seed phrase (I mean a BIP39 seed phrase passing checksum), electrum shows a message saying "BIP39 (checksum: OK)"
If you enter an invalid seed phrase, but all the words are still in BIP39 wordlist, electrum shows a message saying "BIP39 (checksum: failed)"
If you enter words that are not in BIP39 wordlist, electrum shows a message saying "BIP39 (unknown wordlist)"

In all three cases, electrum allows you to create a wallet.

If you check "BIP39" in the mobile version, electrum allows you to generate a wallet only with a valid BIP39 seed phrase.

To OP:
If you check BIP39 in the desktop version and electrum displays a message saying checksum is failed, it still allows you to click on "Next" button and create a wallet, but that doesn't mean you have entered a correct seed phrase.

You can try if it is BIP39 seed phrase as hosseinimr93 commented. On Electrum desktop wallet which is better compared to Electrum wallet on mobile devices, click on standard wallet -> I already have a seed -> option -> check BIP39 seed as illustrated in below images.

On mobile, click on standard wallet -> I already have a seed -> click on that upper right icon as you can see in the first image below and check BIP39. See if it works.

For derivation path
Legacy (p2pkh) for bitcoin addresses that starts from 1
p2sh-segwit (p2wpkh-p2sh) for bitcoin addresses that starts from from 3
Native segwit (p2wpkh) for bitcoin addresses that starts from  bc1

If you check the BIP39 and the 'next' still grey out after entering your seed phrase, then that seed phrase is not correct.

Have you generated the seed phrase using electrum?
As mentioned by OmegaStarScream, the seed you entered isn't a valid electrum's seed.

If the seed phrase has been generated using a different wallet, there's a big possibility that it's a BIP39 seed phrase. If that's the case, you need to click on "options" and check "BIP39".

It is easy to recover[1]. If the next button is still greyed out then you must've mistyped the seed or forgotten a word. You can only click "next" if the seed is valid.

I'm sorry if this topic has already been created before, but I couldn't find the topic.
I had a deposit made at an old address, which I had already deleted
as I had the address saved and the seed too, I thought it would be easy to recover it, but whenever I try to insert the seed to recover the wallet, the next button doesn't work, both in the mobile and windows app.
If I enter the mode only to consult the wallet, the access works, but there it also does not open the option to insert the seed
how to proceed?
