there is completely no reason to assume that any firegl or quatro card can give better performance for money (or even similar for that matter)
Yes there is - nVidia specifically nerfs (or at least did) GPGPU on Fermi cards. There should be no difference with FireGL cards.

Considering the price, they wouldn't be cost effective. There is no difference on AMD cards.

I recently built a new gaming PC, and shortly after I heard about Bitcoin.
Since Gaming GPU's are more for 3d rendering for gaming, Would workstation/Professional GPU's be better at mining? I've tried to search for anything on workstation cards on the forums and google and found nothing.

more than 95% of structure in so called 'pro' chips are exactly the same
there may be some minor modifications, but most of difference comes from drivers anyway

as they are made for pro users (ati top model costs $3500 vs. way more faster 5970 that is around $500) that need some fancy features ie.

FireGL drivers were built with maximum image quality and pixel precision
rather that cheap enormous processing power that gamers require

don't forget to add your findings to the hw comparison table, please
See? This information could be useful if someone happens to have some data on these cards, It could save people the trouble. And so far there is NO data on these cards easily available. You can say it won't be better, but until we know for sure, I can't possibly believe you are right. And if they are better, you'd like to know before you drop $500+ on a 5970, right?
Pro cards use same GPUs. Just look at specs :)
Clock frequency may be even lower.

Workstation cards use the same chips. They just have special drivers for certain applications.
