Exchanges are generally centralized entities, so trades carried out on their platforms are generally "offchain" (i.e. not on the blockchain). This may not be the case with decentralized exchanges in the future.

Hello!

I have one simple question that I did not find information about.

When two persons make a trade on an exchange, does Blockchain register this?

Generally, no.

Or does blockchain only register when you for example deposit and withdraw bitcoins from the exchanges?

Typically, yes.
