As long as you shut down bitcoinqt each time before you move/copy the wallet.dat, that should work. If you are running an old version of the program, you might have to start it up with the --rescan option.
If this is about verifying the send transaction just paste his adress into blockchain.info. It'll be showing up there.
I've just sent some coins to someone, but they have to wait for their bitcoin client to sync with the network.
