If you want to spend parts of the paper wallet, use the paper wallet with the cold storage feature. The client will send any unspent coins back to the originating address automatically, doesn't make sense to send it to anywhere else other than the addresses the user controls.

I intend to sweep (only) a part* of my bitcoin funds from an ATM paper wallet to Mycelium:-)
Does Mycelium automatically return change back to my original paper wallet?

I do understand that in a first step all my funds are "removed" from the paper wallet.
