Which miner under Windows would you suggest for that card? I mine only with the 1 card currently, while I don't use it for gaming. Some years ago I used ethminer, but I don't know if it is still state-of-the-art.
ethminer seems to be an old miner, although it works fine and stably with 10x0 series video cards. Try these miners. Poolin.me has made a good selection for you and all relevant download links.

If its LHR then lolminer is currently the best since they have unlocked 78% of LHR via the last miner update but since yours isn't LHR then use Trex miner, have a great time mining.

I bought a used MSI RTX 3080 Ventus 3x 10G OC "non-LHR" for Ethereum mining and wanted to know if it is necessary to update the BIOS to get better hashrates. What do you think?
First, check the hashrate in Ethereum mining. If your hashrate is around 90 megahash, then you don't need to do anything. If your video card turns out to be an LHR version, then choose a miner with the maximum hashrate. Although this is offset by increased power consumption and overheating.
