I think you should choose Binance exchange.
I buy/sell there for a long time. It's very good

In my country, we are creating a local community to buy and sell Bitcoin. Besides that, we are selling our Bitcoin on some website. Paxful one of them. I sell my Bitcoin on Paxful by USD. And then I withdraw that money to an online Bank and then withdraw it on a local Bank. That's it.

I have had my BTC since 2014 & am thinking about selling some in case the market goes much lower. I am in the UK & bought through the company Quickbitcoin. I would also like to sell through them but they're not answering my emails or messages.

If I have to sell through an exchange, which one would be best? I am very wary of exchanges - I know a lot have been hacked. Any advice would be greatly appreciated. (My BTC are currently offline in a paper wallet so I presume when I import them to a wallet it would need to be somewhere which will also accept my Bitcoin Cash & Bitcoin Gold coins too).

It is also possible to sell bitcoins at the Bitcoin ATM. Not all the ATM transfer your bitcoins to fiat but there are a few in my country. I don't transfer bitcoins to fiat yet but I saw people doing it.

How long will it take on average to get my identity verified?

It depends. Some had it in few days, some complains it takes weeks (e.g. when I was verifying my account with coinbase few years back it was in two days).
AFAIK there was huge inflow of new customers lat weeks and lot of exchanges closed registrations for while .. so I guess they will be overloaded.

check cex.io, coinbase.com, kraken.com or bitstamp.net

But I recommend you to try the localbitcoins ... if you find relevant buyer with same bank you can sell coins within few hours (doublecheck user feedbak before making deal).
