I also advise the Testnet, especially if OP uses Electrum 4+, where it's not as straightforward as in the older versions.

In the Addresses tab select the address you want and right-click => Spend From
This will add a line to the bottom of the Electrum window.

Now you can go to Send tab and spend. It will use only the "spend from" address.

I advise you also have in Preferences (Transactions) Advanced Preview checked.

Basically, yes. In the "Coins" tab, you will see the same address more than once if it received more than a one transaction. You could also select all UTXOs for a specific address at once by going into "Addresses" tab, right-clicking it and selecting "Spend" instead of selecting them manually in the "Coins" tab with CTRL and LMB.

Never tried to do this and at the moment I don't have an easy way to test so I would appreciate if somebody can confirm following. Googled it a bit and sounds quite straightforward.

1. I plan to escrow money for two small gambling pools and I will use 2 different addresses from same electrum wallet to collect them
2. When I need to pay out the rewards I can go to coins tab and right click the address from which I intend to pay out and just select spend. The money sent will be just from that one address.
