The best thing you can do is ... don't try.  It will be a  massive waste of effort.  Even stealing computing time and racking up a massive power bill for someone else will only net you a few pennies worth of Bitcoins.  It is a good way to turn a thousand dollars in electricity into a buck worth of bitcoins.

Why do you this. Surely it would mine a fair amount given the amount of processors?

More thank 0.5 Btc a month?

So I have access to a small server room, around 100 computers each with several Xeon processors with multiple cores. I think in total 3.5k processors.

I can use these servers for free.

What's the best thing to do with them to try and mine Btc?

Any help or advice would be very helpful
