You can still mine without wallet enabled (ie. ./configure --disable-wallet), but you won't be able to do so with the built-in RPC interface. You'll need to use a third party pool software. I think p2pool can operate without a wallet.
Yes, this is how I run my nodes.  Core compiled and built without wallet.  Daemon process running alongside p2pool to feed it work.

Hello my name is Scott and i am a computer science student, i wish to start working on bitcoin-qt source code, but i also want to learn the aspects of bitcoin.
I am using a virtual machine running Ubuntu and upon installing from the source code i decided to leave out a couple of the Dependencies most notably the wallet
Dependencies. Now I am pretty new to bitcoin and the bitcoin community, and I would like to ask do i need the wallet, and if so should i go and install the Dependencies
or can i get by without it, cause I am not 100% sure what it does, but i can assume it deals with trading bitcoins. Also can i still do bitcoin mining without it.
Whatever the answer thanks for looking at my post and I look forward to learning more about bitcoin and furthering my programming skills with this community
