you need to get an invite from the group that facilitates these discussions, usually through bounties or other trading views, check their website or on their bitcointalk thread

Hello, since joining bitcoin forum and investing/trading crypto I've encountered the words slack and telegram allot.
It seems there are allot of coins that use slack as a chat group? I've tried joining slack but there's a fee and it's aimed at people who want to team for a project? Am I at the right slack?

Can anyone point me in the right direction, such as where to create an account?

I'm not sure if it's changed since a year ago, but it was free to sign up at the time. However, these companies have few revenue sources, so will make the free option to register hard to spot. That being said, the people that run the chatrooms might be able to force you to subscribe - in which case they're making money.
