I haven't crashed yet, but I get artifacts in games at these same settings. Could it be a break-in period or is it because I overclocked it all the way instead of step by step in the beginning? I've heard that if you increase your clock bit by bit, it's more stable than going directly to your final overclock.
Stable mining != stable gaming with no artifacts. Try adding a little voltage and or fan speed and see if the artifacts go away.

Looking to sell a Diamond 7970 3 GB. I received this card as an RMA replacement for my previously broken one. Comes with box and all paperwork.
I just got the same card. What program do you recommend for overclocking it (and underclocking memory)? What settings did you try with air cooling or did you go straight to water cooling? I'm going to be using air cooling.
Use MSI Afterburner. With some luck and a little voltage bump you'll be able to hit 1200mhz
How do I know if I fucked up and overclocked too much? It's easy in games because you notice artifacts. I use guiminer if that matters.
It's really easy: either it crashes, or it doesn't. Sometime it can take 20 minutes to an hour to crash, but bump it down 5-10mhz at a time, and eventually you'll find a stable setting.

It is still on the expensive side.   I would trying around the $300 range and you should get some hits.
