Is there any guide to how restore a wallet with electrum or is it so simple that there is no need of a guide?
It's so simple that even a kid can do it.

If you want to restore by using your wallet file, just copy and paste it anywhere and select the file in the Electrum's "Install Wizard".




Or if you want to restore with your seed, follow the Install Wizard, select "I already have a seed", input your seed in the field and click Next.

for wallet.dat i mean file in /appdata/roaming.
So to recover my wallet i need wallet.dat + password or seed. Is it correct?
Yes. You either need the [Wallet + File] Or seed. Provided that your wallet was generated with seed.
If i have only the seed i have to create a new wallet and write my seed, and if i have only my wallet.dat i have to choose "restore wallet?"

Yup. If the wallet is encrypted, you will still have to restore with the seed.

i'm sorry, i don't understand last sentence. If my wallet is encrypted i will always need my seed?
Assuming that you dont have your password with you. I wws refering to your last line.

is there a way to recover my btc on my electrum's wallet or in must need the seed?

And if i only have the seed but i haven't wallet.dat/password,can i recover my btc?

Assuming that you have the wallet file, located in your data directory for Electrum, in the wallets subfolder, you can recover the coins, regardless of you having the seed or not. If you have the seed, you can also recover the entire wallet. This is only if you generated the wallet with the seed, otherwise, you need the wallet file.
