Would a watch only wallet be needed if I am holding btc long term and don’t plan on making transactions in any out ?
Needed for what exactly?
If you want to check the balance in your wallet you can use watch only option, or you can just copy and paste your bitcoin address in any bitcoin explorer like mempool.space.
Only way for balance to change is if your seed words leaked or got stolen somehow.

If you're not going to be doing any transactions, is there any reason to why you don't want to go with a paper wallet?

Create an offline paper wallet, hide it offline, copy the address to a mobile wallet to keep track of your transactions and you're good to go.

I think it is still necessary, just to keep an eye on your wallet for any activity, even if you don't plan on making any transaction, are you also not going to receive funds into your address from elsewhere or send money there yourself. A watch-only wallet would is also necessary in case you receive dust transactions into any of your addresses. Is there any reason why you want to use your airgapped wallet without a watch only version?

Safer? After creating an airgapped wallet, you need a watch only wallet to create and broadcast transactions, your keys are not in your watch only wallet, so you cannot lose your assets through it.
I’m reading I would have to set up a node which is the safest way as people won’t be able to see my transactions.
It is advisable to set up your own node, particularly for privacy reasons.
What I am scared of from reading up on it if I do something wrong as in share my xpub somewhere it can be compromised.  ?
Do not share your Xpub anywhere, but if by mistake you do, you cannot lose your assets if you only expose your extended public key.

You can use Jade with both wallets, and yes Sparrow wallet can be used as offline airgapped wallet, if you set it up correctly.
Nunchuk can be used for mobile devices and Sparrow wallet only with desktop computers, so they both have pros and cons.
I prefer Spparow, but for more complicated multisig setups Nunchuk is better option.

Can sparrow be used with the jade via airgap ? I see that jade recommends on there website to use jade air gapped version with nunchuck. Is it even worth setting it up air gapped or could I just set it up by plugging it into the computer like how you set up a ledger. Thanks
Yes you can use Jade with Spparow just fine, but try them both and see what works better for you.

Certainly my favorite is Sparrow. Nunchuk is far behind.

First, Sparrow creates   wallets in new, descriptor-type formats.

Second, it can be  paired (including the air-gapped way) with the vast majority of hardware wallets.

Third, it is able to fulfill the roll of coordinator for multisig wallets.

And last but not least,  it is user-friendly and straightforward to use.

Sparrow wallet is a good software wallet. Hardware wallet are the ones that are air gapped. Passport wallet is a good hardware wallet. You can use electrum on airgapped device, to serve as your cold storage, and create a watch only wallet to monitor and broadcast your transactions.

I make use of sparrow wallet which I can tell you is good but can't state much about other one, but I think allot of measure to use it can be profer but if your not too ok, kindly use the one you have confirmed favorable though  users have a roll to play for wallet security you must secure all your credentials very properly not just the wallet issuer.

Considering the fact that the jade wallet is a hardware wallet, it should be greatly considered.. 

Sparrow wallet which is a software wallet comes advanced security settings for user protection..  it also supports all features you'll expect a modern Bitcoin wallet to have like a built in Tor, labeling of all transactions and many more..

Yeah nunchuck seems to be controversial with the way they store the encrypted keys to cloud, moreover they're not popular, so you can't get a lot information from other people. I'd choose the popular one i.e. Sparrow.

I'm not that familiar with Nunchuck, but it looks like it's paid (depending on what you're looking for) so I'd go with either Sparrow or Jade.
Nunchuck is also free except you go for the inheritance plan. If you do not go for it, you can use it as a normal wallet and have complete control over your keys and no payment.

Jade is a hardware wallet so it should be good (not sure if it's the best choice for a hardware wallet though). Sparrow is a good wallet. It can be used offline on your airgapped device.

Nunchuck wallet is also good but I do not like the fact that it has inheritance plan or something like that. You can read about what I am talking about:
