Are the non spent/donated funds lost this way? What precedure do you recomend?
There is no special ''procedure'',m you just sent any amount of coins to their address and that is it.
Unless your keys are leaked and exposed in some way, there is no way anything to happen with rest of your coins.
You can also split coins in your own wallet with amount you want to donate, that way you wont have random address with change.

The above posts explained it pretty well but let me give you simple example.

A (address) with balance of xxxBTC
B (donation address)
C (change address)

Now you recovered the wallet in electrum or any wallet software sending an amount of yyy to the donation address B from A so the remaining of (xxx-yyy) will be returned back to address C which will be different address but a part of the same wallet so the balance will be available to spend from the wallet again.

You can opt out the change address and let the remaining of xxx to back to A as well.

Since I am not going to donate the entire BTC funds to this foundation I am wondering what will happen with the rest if I am
going to shutdown Tails..

I will start with something a bit deeper: your funds are not on Tails and not even in the wallet. The easier to understand is that the funds are on the blockchain.
The wallet only offers the keys to tell the blockchain that those funds are yours and you are allowed/entitled to spend them.

Keep in mind that the correct way to spend your funds with Tails (as cold storage) are:
* recover your wallet on Tails WITHOUT INTERNET. I usually recommend also no persistency.
* if your wallet is recovered from seed, then copy the master public key
Note: you will never see funds in your wallet on Tails.

On another system or after a reboot make a watch only wallet off that master public key. This will be on a system with internet. Here you'll see the amount of funds, here you'll make the transaction.
You will see on Electrum that it will send the donation amount to the donation address and the rest to another address. Normally that another address is a CHANGE ADDRESS in YOUR WALLET. Unless it's a counterfeit Electrum or you have some odd settings, this is a normal behavior.
If you don't trust this an want control on where to send the change, that's also possible, just ask and people will tell.

Now this transaction has to get to that Tails (so extra USB maybe), get signed, get back to the online system and broadcasted.
Remember, tails remains offline all the time.

So, the change will return to your change address, so back to your wallet.
So, since the money are not actually in the wallet, it doesn't matter if Tails is started or not.

Assuming I understand what you're trying to do here... the remaining funds will be sent to a "change address" (another address that belong to same wallet). You can access it anytime using the seedphrase/private keys that you first used to restore the wallet into Electrum.

So the answer is NOTHING. Nothing is going to happen to the rest of the funds.

You restore the wallet into Electrum -> you send the funds to GraphneOS -> The rest of the funds remains in your wallet.

If you're going to sweep funds from a private key however, instead of simply importing a seedphrase, then that's different.

Hello

started with Bitcoin about in year 2020 using BRD wallet app and never touched it again. Today I would like to recover my funds into
Electrum of Tails (no persitance) in order to make a donation to GraphneOS.

I will recover the funds into Electrum like shown here:
