I'd love to! In general we want to bring more exposure to as many quality projects as possible. If there is someone that has a steem app or any app for that matter, would love to interview them and share their story

Definitely take a look at either Musing or eSteem, those are pretty great dApps on Steem!

ICOEthics is really doing good for this community by exposing those scam projects before they can go mainstream and investors falling for the trap. However, before having ICOEthics ethics here, we have the Legendary Gleb Gamow. Here is a interview done on him by CoinClarity. . If you're really interested you can check out this, (https://bpip.org/), a Bitcointalk Public Information Project created by Vod. You can see a lot of members based on their merits and many more, you can start there if you really wanted someone to be interviewed.

As for projects, I can't really think of anything at this point. Perhaps you can go to the altcoin sections and see projects worth mentioning.
