If you do not write your name on the envelope, and the receiver doesn't rat on you, which would be impossible for him if he doesn't know your real name, then there shouldn't be a risk at all. About kalles kaviar, yeah I'm not sure I think it needs refrigeration, but I see other online shops selling it so maybe it works to ship it if it's unopened.
