If you want a general overview, then I would probably use the graphs available from here: https://data.bitcoinity.org/markets/volume/. You can filter by specific exchanges and time frames.

The problem with exchange volume data is that those exchanges really have some fake volume,  so it is a bad data to work with...

In the animation it is possible to see Mt Gox growth and suddenly crash, very interesting

If you want specific numbers, then use this site instead: https://www.cryptodatadownload.com/data/. Choose the exchange you are interested in, then the market you are interested in, and you can get volume data down to the minute if you so desire.
