All I have is the address since I made a note of it before I deleted the app and restored it. The new Bitcoin cash address is all that's in the wallet now.  How can I retrieve funds if all I have is the Bitcoin cash address I sent the bitcoin to when I purchased it through Simplex?

Unfortunately this did not work since the address was not in the list of "unused addresses" when I restored from backup. Now I have the two transactions stuck in the blockchain with no way to retrieve it.

You will just need to wait, you did everything that you could in order to retrieve that transaction and get your funds back.

You should not forget that you sent them all to a bitcoin cash address (this process is going to take a lot of time)

but if you have the private key of the bitcoin cash address that you sent your coins to you can easily recover them, but it will take a while.

And just be patient, the whole network is saturated and that might be the real problem of why it is taking so long.

I have a pending transaction with a $20 worth of fees stucked since December 18th.

About a week ago I purchased Bitcoin and inadvertently sent it to my Bitcoin Cash address. I did not realize this until after I uninstalled and re-installed the Bitcoin Wallet Android app thinking it was a wallet issue.

I followed the instructions on the Bitcoin.com website "https://walletsupport.bitcoin.com/article/110/i-accidentally-sent-btc-to-my-bch-wallet" sent to me by Simplex (the ones who processed the transaction).

Unfortunately this did not work since the address was not in the list of "unused addresses" when I restored from backup. Now I have the two transactions stuck in the blockchain with no way to retrieve it. Can anyone please help?! Also I can't seem to log a ticket on the Blockchain support site https://supportDOTblockchainDOTcom/hc/en-us. It would appear that site is completely inundated with issue resolution requests.
