Volume of buyer and seller on order book can be changed anytimes,  in my opinion good chart for trading is use Heiken ashi that more easy to read the trend of price of crypto.  Heiken ashi is the next candle stick that has more accurate than others one.

This order book has red lines and green lines how is that calculated ?

It's the amount from the total, on both sides.
It's usually grouped by a number of decimals, but in your image the total column is already grouped at 2 decimals, so in your case it's simply the total.

Thanks man! This surely help me understanding all about this more. Someone this could make a great help on my tradings because there is a sign on whether what could be my next move in trading.
