I have transferred them to an Electrum wallet.

This was wrong. You have to import the private keys into Electrum, to have the same wallet. Also, Multibit Classic is outdated and buggy, please stop using it.
Now you better post the tx ID and we can see what's there. If the only problem was a too low fee, you may try CPFP.
Again, the first step would be to post the tx id and then ask for guidance step by step.

Hi,

I discovered I had £300 of bitcoin in my MultuBit wallet but it was unconfirmed. I have tried to repair the wallet but it's remaining unconfirmed. I have transferred them to an Electrum wallet. Will I be able to use / sell them? 

Is it MultiBit Classic or MultiBit HD wallet? In any case both wallets are abandoned by developers long time ago and I doubt you can send anything from them in transaction, they just can not sync so you see your balance unconfirmed.

If you have MultiBit Classic then only way is to export private keys and import them in some wallet like Electrum, it should be easy and it is free. If is it about MultiBit HD then only option is to use seed and also import it in Electrum. So check for your private keys/seed and just follow instructions how to import them in Electrum.
